Creamy Tuscan Chicken

  1. In a shallow bowl, add chicken, season salt, Italian seasoning and black pepper.
  2. Coat the seasoned chicken in the flour and set aside.
  3. In a large skillet, cook the bacon until crispy then remove to paper towel to drain.
  4. In the same skillet on medium high flame, add half of the butter and all of the olive oil.
  5. Once melted, add the chicken and cook on the first side for 3-4 minutes (depending on the size of your chicken breast). Flip the chicken and cook for an additional 3 minutes or until the chicken is done and internal temperature is 165°F.
  6. Set chicken aside to cool before cutting into strips or cubes.
  7. In the same skillet, add the remaining butter and the onion. Sauté until the onion starts to get translucent.
  8. Add chicken stock, cream, tomatoes, garlic and honey mustard to the skillet, whisking until completely incorporated.
  9. Add the cheese and spinach to the skillet and lower the heat, simmering for approximately 2 minutes.
  10. Now, add in the pasta, chicken and bacon, lightly mixing until combined. Top with additional cheese before serving if desired
