Easy Crunchy Fried Fish

  1. Fill a cast iron skillet or frying pan with oil and heat until 350°F.
  2. While the oil is heating, add the catfish to a bowl.
  3. In a separate bowl, whisk together the eggs and mustard until completely combined.
  4. Pour the egg mixture over the fish, fully covering all sides, and set aside.
  5. In a clean bowl, whisk the cornmeal, flour, season salt, black pepper, garlic and paprika together.
  6. Coat fish in the dry mixture and shake off any excess before adding it to the skillet or frying pan.
  7. Working in batches to avoid overcrowding, fry the fish until golden brown on both sides. This is approximately 4 minutes per side, depending on the thickness of the fish.
  8. Place fried fish on paper towel to drain any excess grease before serving.
