- Roast:
- Place roast in pan.
- Generously cover top of roast with mustard and spread evenly.
- Bake at 325 degrees for 20 – 25 minutes per pound or until internal temperature is 160 degrees.
- Uncover at end of cooking to brown.
- Sweet and Spicy Sauce:
- Sauté green pepper and onion in 1 – 2 tbsp of oil.
- Add mustard and pineapple juice and cook until thickened.
- Add pineapple and simmer 5 – 10 minutes or until warmed.
- Season to taste.
- Serve with pork.
