Sweet and Spicy Pork Sirloin

  1. Roast:
  2. Place roast in pan.
  3. Generously cover top of roast with mustard and spread evenly.
  4. Bake at 325 degrees for 20 – 25 minutes per pound or until internal temperature is 160 degrees.
  5. Uncover at end of cooking to brown.
  6. Sweet and Spicy Sauce:
  7. Sauté green pepper and onion in 1 – 2 tbsp of oil.
  8. Add mustard and pineapple juice and cook until thickened.
  9. Add pineapple and simmer 5 – 10 minutes or until warmed.
  10. Season to taste.
  11. Serve with pork.
